Mild smoking is a delicate process. We start this process by salting the fish in order to keep it juicy prior to the smoking process. The tight control of the temperature and humidity levels assures the exquisite aroma, flavor and color. We use only sea salt for smoking process to keep fish natural freshness. We use fresh chilled raw materials to produce our delicacy. This is one of the reasons why our products are so famous for their delicious taste and extended shelf life. In our curing process we only use superior hardwood chips which allows us to reach the required delicate aroma and golden color at the same time minimizing the levels of combustion residue.
